Refreshing Frozen Strawberry Lemonade Slushie with Tajín Rim

A quick and easy frozen strawberry lemonade slushie with a spicy-salty Tajín rim, perfect for cooling off on hot summer days and impressing guests with a unique twist.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/4 cup granulated sugar (adjust to taste, or use honey/agave)
  • 1 cup cold water
  • 34 cups ice cubes
  • Tajín seasoning for rimming glasses
  • Lemon wedges for rimming glasses

Instructions

  1. Pour a thin layer of Tajín seasoning onto a small plate. Rub a lemon wedge around the rim of each glass to moisten, then dip the glass rims into the Tajín, gently twisting to coat evenly. Set aside.
  2. Hull and slice strawberries.
  3. Squeeze lemons until you have about 1/2 cup (120 ml) of fresh lemon juice. Strain to remove seeds if desired.
  4. In a blender, combine sliced strawberries, fresh lemon juice, sugar, and cold water.
  5. Add 3 to 4 cups of ice cubes to the blender.
  6. Pulse on high until the mixture is smooth and slushy, about 1-2 minutes. Adjust consistency by adding water or ice as needed.
  7. Taste and adjust sweetness by adding more sugar or honey if desired, then blend briefly again.
  8. Pour into the prepared Tajín-rimmed glasses and garnish with a lemon wedge or whole strawberry.

Notes

Use fresh ice cubes from filtered water for best taste. Rim glasses just before serving to prevent seasoning from sliding off. Adjust sugar based on strawberry sweetness. If no Tajín is available, substitute with chili powder, lime zest, and salt. Frozen strawberries can be used if thawed slightly. Serve immediately for best texture.
