  • 3 cups (450g) frozen watermelon chunks
  • 1/4 cup (60ml) fresh lime juice
  • 2 tablespoons agave syrup or honey
  • 1/4 cup (60ml) cold water
  • Tajin seasoning for rimming the glass
  • Coarse salt for rimming the glass
  • Lime wedges for garnish and rimming

Instructions

  1. Prepare the Tajin salt rim by mixing 2 tablespoons of Tajin seasoning with 1 tablespoon of coarse salt on a small plate.
  2. Rub a lime wedge around the rim of each glass to moisten it, then dip the rims into the Tajin-salt mixture. Set glasses aside to let the rim set for about 5 minutes.
  3. If using fresh watermelon, cut into 1-inch cubes and freeze for at least 4 hours or overnight.
  4. Juice fresh limes to get 1/4 cup (60ml) of juice, removing any seeds.
  5. In a high-speed blender, combine frozen watermelon chunks, lime juice, agave syrup, and cold water. Blend on high for about 45 seconds until smooth and slushy, pausing to scrape down the sides if needed.
  6. Check consistency and taste; add a splash more water if too thick and adjust sweetness or lime as desired.
  7. Pour the mocktail into the prepared glasses and garnish with a lime wedge on the rim.
  8. Serve immediately for best icy, slushy texture.

Notes

Use frozen watermelon chunks instead of fresh with ice to avoid dilution and achieve a slushy texture. Wet the glass rim thoroughly but avoid dripping to ensure the Tajin salt sticks well. Blend in short bursts and scrape sides to maintain smooth texture. Fresh lime juice is preferred over bottled for best flavor. For extra flair, add fresh mint leaves or a slice of jalapeño for heat. Store blended mocktail in freezer up to 24 hours and re-blend before serving. Rim glasses just before serving to keep the salt crisp.
