A quick and easy summer drink combining ripe mangoes, crisp cucumber, fresh lime juice, and a touch of chili powder for a refreshing and mildly spicy beverage.

Ingredients

  • 2 medium ripe mangoes, peeled and chopped
  • 1 large cucumber, peeled and chopped (English cucumber preferred)
  • Juice of 2 limes
  • 1/4 to 1/2 teaspoon chili powder (adjust to taste, ancho chili powder recommended)
  • 3 cups cold water
  • 1 to 2 tablespoons agave nectar or honey (optional, depending on mango sweetness)
  • A handful of fresh mint leaves (optional, for garnish)

Instructions

  1. Peel and chop 2 ripe mangoes and 1 large cucumber into chunks.
  2. Place mango and cucumber chunks in a blender. Add juice of 2 limes, 3 cups cold water, and 1 tablespoon agave nectar or honey if using.
  3. Blend on high for 1-2 minutes until smooth and creamy.
  4. Add 1/4 teaspoon chili powder, blend briefly, and taste. Adjust chili powder up to 1/2 teaspoon and sweetener as desired, blending after each addition.
  5. Optional: Pour the mixture through a fine mesh strainer into a pitcher to remove pulp, pressing with a spoon to extract liquid.
  6. Refrigerate for at least 30 minutes to chill and let flavors meld, or add ice cubes before serving.
  7. Pour into glasses and garnish with fresh mint leaves or a thin cucumber slice. Serve immediately.

Notes

Adjust chili powder to your preferred spice level. Use agave nectar for a dairy-free sweetener. If the drink is too thick, add more water. Blend just until smooth to avoid heating the mixture. Store refrigerated up to 48 hours and add chili powder just before serving for freshest spice.
