Savory Smash Burger Sliders with Creamy Secret Sauce

  • 1 lb ground beef, 80/20 blend
  • Salt and freshly ground black pepper, to season
  • 1 tbsp vegetable oil or canola oil
  • 8 slider buns, lightly toasted (brioche recommended)
  • 4 slices cheddar cheese, halved
  • Thinly sliced red onions
  • Leafy lettuce or baby spinach
  • Dill pickle slices (optional)
  • ½ cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp pickle juice or apple cider vinegar
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Mix the Secret Sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, pickle juice, garlic powder, salt, and pepper until smooth. Refrigerate while preparing the burgers.
  2. Preheat the Pan: Heat a cast iron skillet over medium-high heat for 3-4 minutes until very hot but not smoking. Add vegetable oil and swirl to coat.
  3. Form and Smash the Patties: Divide ground beef into 8 equal portions (about 2 oz each). Roll into loose balls. Place 2-3 balls in the pan without crowding. Using a sturdy spatula, press down firmly to smash into thin patties about ¼ inch thick. Season immediately with salt and pepper.
  4. Cook the Patties: Cook undisturbed for 2-3 minutes until edges are crispy and browned. Flip carefully, place half a slice of cheddar cheese on each patty, and cook another 1-2 minutes until cheese melts and patties are cooked through but juicy. Remove and keep warm.
  5. Assemble the Sliders: Spread secret sauce on the bottom of each toasted bun. Layer lettuce or spinach, cheesy patty, red onions, and pickles. Top with bun crown and serve immediately.

Notes

Use cold beef to help patties hold together and prevent shrinking. Don’t overwork the meat. Season patties immediately after smashing. Don’t press patties after flipping to keep juices. Cook in batches if pan gets crowded. Toast buns for best texture. Secret sauce flavors improve after chilling.
