  • 3 cups (120 grams) Goldfish crackers, classic cheddar flavor
  • 2 cups (60 grams) mini pretzels
  • 1 cup (180 grams) white chocolate chips or melting wafers
  • 2 tablespoons (28 grams) unsalted butter, softened
  • 2 tablespoons (15 grams) powdered sugar (optional)
  • Pinch of sea salt
  • Optional mix-ins: 1/2 cup (60 grams) roasted nuts (almonds or cashews) or a handful of dried cranberries

Instructions

  1. In a medium bowl, mix together 3 cups (120 g) of Goldfish crackers and 2 cups (60 g) of mini pretzels. If adding nuts or dried fruit, toss those in now.
  2. Place 1 cup (180 g) of white chocolate chips and 2 tablespoons (28 g) of softened unsalted butter into a microwave-safe bowl. Microwave in 20-second bursts, stirring well after each, until smooth and creamy (about 1-2 minutes). Alternatively, melt chocolate and butter together over a double boiler on low heat, stirring gently until silky.
  3. If desired, stir in 2 tablespoons (15 g) of powdered sugar into the melted chocolate mixture until smooth.
  4. Transfer the Goldfish and pretzel mixture onto a parchment-lined baking sheet. Use a spoon or spatula to drizzle the white chocolate evenly over the top.
  5. Lightly sprinkle a pinch of sea salt over the drizzle while it’s still wet. Let the snack mix sit at room temperature for 20-30 minutes or place it in the fridge for 10-15 minutes to let the chocolate harden.
  6. Once the drizzle has set, break the mix into bite-sized clusters. Store leftovers in an airtight container at room temperature for up to 3 days.

Notes

Melt white chocolate gently in short bursts to avoid grainy texture. Toss snack mix thoroughly before drizzling for better coating. Let drizzle set properly for best texture. Optional mix-ins can customize flavor and texture. Use gluten-free pretzels and gluten-free Goldfish crackers for a gluten-free version. Dairy-free alternatives can be used for white chocolate and butter.
