  • 3/4 cup (150g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cream of tartar
  • 23 tablespoons mini chocolate chips
  • White chocolate chips (optional, for contrast)

Instructions

  1. Preheat oven to 200°F (95°C). Line two large baking sheets with parchment paper.
  2. Place egg whites and cream of tartar in a clean, dry mixing bowl. Whip on medium speed until foamy.
  3. With mixer on medium-high, slowly add sugar one tablespoon at a time, allowing each to incorporate before adding the next (approx. 5 minutes). Add vanilla extract.
  4. Whip until stiff, glossy peaks form. The mixture should feel smooth, not gritty, when rubbed between fingers.
  5. Pipe small mounds onto parchment paper to form ghost shapes (a round base with a smaller round on top). Press two mini chocolate chips onto each for eyes.
  6. Bake for 1 hour and 15 minutes, rotating trays halfway through. Cookies are done when dry to the touch and lift easily.
  7. Turn off oven and leave cookies inside with the door cracked open for 15-30 minutes to cool and crisp further.
  8. Let cool completely before handling or storing.

Notes

Ensure all equipment is completely clean and dry, as any grease or water will prevent egg whites from whipping. Use room temperature egg whites for best volume. If the kitchen is humid, add extra baking time. Store in an airtight container with a slice of bread or silica gel packet to maintain crispness.
