  • 1 cup (245g) pumpkin purée
  • 2 large eggs
  • 1 cup (240ml) milk (dairy or plant-based)
  • ⅓ cup (80ml) pure maple syrup
  • 2 tablespoons (30ml) coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Optional mix-ins: ½ cup chocolate chips, ½ cup chopped pecans or walnuts, ¼ cup dried cranberries, ¼ cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper or silicone liners. If using paper liners, spray lightly with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the eggs, pumpkin purée, milk, maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.
  3. Add the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a spatula or wooden spoon until evenly mixed. The batter will be wet and loose.
  4. If using any mix-ins, fold them in gently until evenly distributed.
  5. Scoop the mixture into the prepared muffin cups, filling each about ¾ full. Use a cookie scoop or ¼-cup measuring cup for even portions.
  6. Bake for 22 to 25 minutes, or until the tops are set and lightly golden. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
  7. Let the cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Store in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Notes

Let the batter sit in the muffin cups for 10 minutes before baking for a softer texture. Use room temperature ingredients to prevent coconut oil from solidifying. These taste even better the next day as flavors meld.
